Level up your queso game with Champ’s Choice Birria Style Blend! This smoked queso blanco is rich, creamy, and packed with bold birria-inspired flavors, perfect for dipping, drizzling, and devouring at your next tailgate or backyard cookout.

Ingredients

  • 1 lb. Ground Beef (may use turkey, chicken, pork, or venison)

  • 3 tbsp. “Champs Choice” seasoning (divided)

  • 2 bricks of Cream Cheese

  • 2 c. Pepper Jack Cheese (shredded)

  • 1 can of Rotel

Directions

  • Set up smoker or grill for indirect cooking and stabilize at 250 degrees
  • Brown the ground beef in a skillet, drain the grease and add 2 tablespoons “Champ’s Choice” seasoning and mix well
  • Add the seasoned ground meat, the cream cheese, shredded cheese, and can of Rotel to a disposable aluminum pan or large cast iron skillet, and top with remaining 1 tablespoon of “Champ’s Choice” seasoning
  • Place on smoker or grill
  • After 30 minutes stir to combine ingredients
  • Continue cooking for 20-30 minutes until ingredients are combined and all of the cheese is melted.
