These birria beef short ribs, made with Champ’s Choice Birria Style Blend, are rich, tender, and packed with deep, smoky flavor. Perfect for tacos, ramen, loaded fries, and more—this is slow-cooked comfort food at its finest!

Ingredients

  • 4-5 lbs beef short ribs

  • 3 tbsp Champ’s Choice Birria Style Blend (for seasoning the meat)

  • 2 tbsp Champ’s Choice Birria Style Blend (for the broth)

  • 2 tbsp neutral oil (avocado or vegetable)

  • 6 cups beef broth

  • 1 small onion, diced

  • 6 cloves garlic, minced

  • 2 tbsp tomato paste

  • 2 tbsp apple cider vinegar

Directions

  • Pat the short ribs dry and generously season all sides with 3 tbsp Champ’s Choice Birria Style Blend.  Let them sit for 15-20 minutes to absorb the flavors.
  • Heat oil in a Dutch oven over medium-high heat. Sear the short ribs for 2-3 minutes per side until a deep brown crust forms. Remove and set aside.
  • In the same pot, sauté onions until softened (3-4 minutes). Add garlic, tomato paste,  and 2 tbsp Champ’s Choice Birria Style Blend stirring until fragrant (1-2 minutes). Pour in apple cider vinegar to deglaze, scraping up the browned bits.
  • Return the short ribs to the pot.  Add beef broth.  Bring to a gentle simmer, cover, and cook at 325°F in the oven (or low heat on the stove) for 3.5-4.5 hours, until the meat is fall-apart tender.
  • Remove short ribs and shred the meat. Skim excess fat from the braising liquid and blend it (if a smoother consistency is desired) to use as a dipping consommé.
  • Easy Slow Cooker Adaptation:
  • Season the short ribs with 3 tbsp Champ’s Choice Birria Style Blend.
  • Sear them in a pan (optional for more flavor).
  • Add them to the slow cooker with onions, garlic, tomato paste, vinegar, 6 cups beef broth, and 2 tbsp Champ’s Choice Birria Style Blend.
  • Cook on LOW for 8-10 hours or HIGH for 5-6 hours, until the meat is tender and shreds easily.
