If you’re looking for a showstopper dish for your next backyard cookout or tailgate. Look no further than these Champ’s Choice Party Ribs. What makes party ribs special? Instead of leaving the racks whole, we cut the ribs into individual pieces before they hit the grill. That means every side of every rib gets maximum seasoning, maximum smoke exposure, and maximum bark. It’s a genius move when you’re short on time but still want that perfect bite-through texture and deep smoky flavor.

For this recipe, I used two racks of Kurobuta spare ribs from Snake River Farms, beautifully marbled and tender. After removing the membrane, I sliced the racks into individual ribs. Then coated all four sides liberally with Champ’s Choice seasoning. While doing this, I preheated my Big Green Egg to 250°F and set it up for indirect cooking. For smoke, I went with bourbon barrel chunks, but you can also use hickory if you prefer a classic BBQ flavor.

The ribs cook for about three hours, getting a spritz of apple juice and apple cider vinegar after the first hour to keep them juicy. Once they’re done, I pull them off the grill, and toss them generously in my homemade Champ’s Choice BBQ sauce. Then pile them high on a platter. Serve them with extra sauce on the side or drizzle a little more over the top, either way, they’re impossible to resist.

  • Remove the membrane from the back of the ribs. Cut each rack into individual ribs.
  • Coat all four sides of each rib with a generous amount of Champ’s Choice seasoning.
  • Preheat your grill (Big Green Egg or similar) to 250°F, set up for indirect cooking. Add hickory or bourbon barrel chunks for smoke.
  • Place the ribs on the grill and cook for about 3 hours. After the first hour, spritz with a mixture of apple juice and apple cider vinegar.
  • Once cooked, remove the ribs and place them in a large bowl. Toss with plenty of homemade Champ’s Choice BBQ Sauce, ensuring every rib is coated.
  • Serve on a platter with extra sauce on the side or drizzle over the top. Enjoy!
