Giant Grilled Chicken Parmesan Sandwich

Jump to Recipe

There’s something about taking a classic comfort food and putting it on the grill that makes it even more special. That’s exactly what happened with this Giant Grilled Chicken Parmesan Sandwich. It started as a simple idea: crispy chicken cutlets, melty cheese, tangy marinara, and garlic bread. But when layered together into one massive sandwich, it turned into a showstopper that easily fed the whole family.

I began with three boneless, skinless chicken breasts. Each one was sliced in half lengthwise to create thin cutlets, then pounded flat between sheets of plastic wrap. This step is important because it ensures the chicken cooks evenly and stays tender. Once prepped, the cutlets went through a three-step dredge: flour, an egg wash, and finally a coating of panko breadcrumbs mixed with shredded parmesan and dried Italian seasoning.

Instead of frying, I set up my grill for indirect cooking, keeping the heat steady. The chicken went on the grill and cooked for about 12 minutes per side until golden brown, crispy, and above 165°F internally. As they were finishing, I topped each cutlet with a slice of provolone cheese, letting it melt into the crust.

Meanwhile, a loaf of garlic bread, brushed generously with butter, was grilled until toasted and fragrant. This became the foundation of the sandwich. I layered three of the cheesy cutlets on the bread, then spooned over marinara sauce. Another three cutlets went on top with more marinara and basil, and finally the second half of the garlic bread sealed the deal.

The result was nothing short of a monster. Crispy breaded chicken, gooey cheese, garlicky bread, and rich tomato sauce all came together in every bite. Cutting it into slices made serving easy, and it was just as fun to eat as it was delicious. Best of all, it’s approachable enough to pull off on a weeknight while still feeling like an over-the-top meal worthy of a Saturday cookout.
