Brighten up your steak with this easy Pomegranate Chimichurri! Packed with fresh herbs, garlic, lemon, and juicy pomegranate seeds.

Ingredients

  • 1/2 cup chopped parsley 

  • 1/4 cup chopped oregano

  • 2 cloves chopped garlic

  • 1 shallot diced

  • 1 teaspoon salt

  • 1 teaspoon coarse black pepper 

  • Zest of 1 lemon

  • Juice of 1/2 a lemon

  • 1/4 cup red wine vinegar

  • 1/2 cup olive oil

  • 1/2 cup pomegranate seeds

Directions

  • Finley chop the parsley, oregano, garlic, and shallot by hand and add to a bowl
  • Add the salt, pepper, lemon juice and zest, red wine vinegar, olive oil and pomegranate seeds
  • Store in an air tight container, like a mason jar
  • Keep it fresh by storing it in the fridge for up to 5 days. Just give it a good shake before serving.
